Applied Community Nutrition

Prerequisite(s): NUFD 240; and NUFD 381 may be taken as prerequisite or corequisite. Restriction(s): Dietetics concentration. This service learning course provides a comprehensive overview of the impact of federal and state legislation on community nutrition service, dietetics practice, and health care within the United States. Students learn about the Nutrition Care Process, which is a systematic approach to providing quality nutrition care consisting of four distinct, interrelated steps entailing nutrition assessment, diagnosis, intervention, and monitoring/evaluation. The course demonstrates the application of this process. Nutrition informatics-the intersection of information, nutrition, and technology-is also presented. Students complete 20 hours of community service in a local community service placement aligned with their course objectives.
