Science of Nutrition

This course examines nutrition as a scientific discipline. In this course, students learn about nutrients and nutritional requirements for people of different ages and health conditions. Students explore the sources of scientific information and how that information reaches the American public. Students review articles and books critiquing them for their scientific rigor. Additionally, students investigate why they eat, what they do and examine different food cultures. The lab component of this course supports of above topics.
